Aly makes fun of herself for not being the cook that Emily and I are. Her modus operandi is to find a recipe and then depart quickly therefrom ... because "it's all good" and "recipes are just suggestions!" She might not enjoy cooking or baking as much as Em and I, but she sends me links for recipes all the time with strong hints that I should make them. I'll share two of those recipes with you this week ... starting, of course, with dessert because life's too short.
She sent this link from The 10 Cent Diet, but she probably found it on Pinterest. This is a chocolate cake — a gluten-free one that has a strange ingredient in it and not a bit of flour. I'll leave you to download the link to discover the strange ingredient, but you must trust me when I say that this cake is delicious baked. Tasting the batter, however, was not my brightest moment.
The original poster suggests using a blender, but I found that a food processor worked better. I also used a tart pan with a removable bottom rather than a spring form pan and it worked just fine.
I served this on July 4th and took the leftovers to the lake. We served it with ice cream and berry topping. Everyone who tasted it liked it and never knew how healthful it was!
