During a month when some of us are focusing on clean eating, Baked Apples fill the bill for a fabulous dessert or breakfast, in my case. :)
There is a little butter and I used maple syrup instead of honey, but how much better does it get than a full apple stuffed with raisins, dried cranberries, dates, and pecans?
I used Fuji apples and they held their shape beautifully, but were almost too sweet. I found that using a melon baller to remove the core was easier than using an apple corer, especially since I didn't want to go clear through the apple. If I had served this for dessert, I would've set it on a bed of Créme Anglaise or served it with ice cream, but I decided that for breakfast, I should probably skip that indulgence.
